An AI  Exotic Ginger Cookie Recipe

I've long wanted to experiment with different kinds of flours, and finally got the opportunity today to play with Tapioca flour which reminded me of General Tapioca from the comic series, Tintin.

Playing around with an LLM, I ended up with this delightful recipe:


🌿 Airfryer Honey-Ginger Cookies

(Egg-Free, Gluten-Free, Dairy-Free)

Temp: 160 °C (airfryer)


🥣 Ingredients (Weights)

Dry Premix (can be stored 2–3 weeks in airtight container):

  • Tapioca flour: 70 g
  • Chickpea flour: 35 g
  • Coconut flour: 15 g
  • Brown sugar: 15 g
  • Ground ginger: 2 tsp
  • Cinnamon: ¼ tsp (optional)
  • Salt: pinch

Wet Ingredients (mix fresh before baking):

  • Honey: 40g (equivalent to about 3 large teaspoons)
  • Coconut oil (melted in the microwave): 60 g
  • Chia seeds: 10 g + 30 g warm water (10 min to gel)

🔧 Instructions

  1. Prep chia gel:
    Mix 10 g chia seeds + 30 g warm water. Let sit 10 min until thick.
  2. Combine wet ingredients:
    Melt coconut oil and mix with honey. Stir in chia gel.
  3. Mix dry + wet:
    Add wet mixture to premixed dry ingredients. Stir until a sticky dough forms.
    • If too wet → add 2–3 g tapioca flour.
    • If too dry → add 2–3 g water.
  4. Shape cookies:
    Scoop ~20 g dough per cookie. Roll into balls and flatten slightly (~½ cm thick).
    • Line airfryer basket with trimmed parchment.
    • Leave ~3 cm between cookies.
    • Use a fork to gently emboss the pattern on top. It's absolutely known that pretty patterns make cookies more tasty!
  5. Bake:
    160 °C for 8–9 min. Edges set, centers soft (Don't peak, just trust the process)
  6. Cool:
    Let cookies sit in basket 2–3 min, then transfer to wire rack to firm up completely.

🍪 Notes

  • Texture: Dense, chewy, slightly caramel-y from honey, rustic edges.
  • Flavor: Warm ginger spice shines; slightly earthy from chickpea flour.
  • No leavening: They won’t puff. If your flour is just right, they should keep their shape.

Verdict?

Surprisingly tasty! They didn't crumble and fall apart like overcooked granola, which my previous experiment ended in.
